DESCRIPTION:From Equilibrio Norte –\nJoin us in welcoming the Lummi Nation on their totem pole journey\, known as “Qwel Lhol Mech Ten”\, (Our Shared Responsibility). This 9\,000 mile\, 23 day journey is designed with the goal of returning “Tokitae”\, aka Lolita\, a captive southern resident killer whale\, from a Miami aquarium to her pod in the Salish Sea. While sharing the story of Tokitae and her importance\, the Lummi will also join local indigenous leaders working to protect the land\, water and culture. \nFor countless generations\, the Lummi nation and their allies have been working to protect the Salish Sea from oil and gas drilling and industrial export facilities. For the past five years\, they have traveled thousands of miles with massive custom-carved totem poles from the Nation’s world-famous House of Tears Carvers. \nThe Lummi will join with Native Texas activists for a panel on Indigenous Resistance. \nTexas and the Northwest have been culturally connected for thousands of years. Our relatives stretch across these lands. Our relatives also stretch beyond nationality\, culture\, race or religion. Our relatives stretch beyond human\, animal\, plant\, desert\, mountain or ocean. DESCRIPTION:From the Sustainable Food Center –\nSharpen your knife skills\, learn where your favorite cuts of meat come from\, and meet a local farmer in our Whole Hog Butchery class! \nJoin professional butcher and co-founder of the Central Texas Meat Collective\, Julia Poplawsky\, in SFC’s The Happy Kitchen and learn how to break down a whole hog\, transforming it into roasts\, chops\, ribs\, pork belly and more. Learn what to do with the trimmings\, skin and bones\, and pick up tips for preparing and curing meat at home. Also joining us will be Leah Gibson\, owner of Boxcar Farm & Garden\, to talk about the pasture-raised\, heritage breed hog that we will be using in class. \nTo allow time for one-on-one instruction and in-depth discussion\, class size is limited to 6 hands-on participants and 6 observers (see below for ticket options). \nClass will cover: \n\nbulk meat sourcing tips;\nbasic hog anatomy;\nsafe handling of meat\, knives and butchering tools;\nhow to break down a whole side of hog into cook-ready cuts of meat;\nhow to use the leftover bones\, trimmings and skin\n\nYou will work together with Julia to produce all the cuts. Please wear closed-toe shoes\, comfortable clothes\, hair up or covered\, and bring a full coverage apron. Knives and cutting gloves will be provided. Bring a cooler or insulated food bag: hands-on participants will take home what they work with in class\, approximately 10-15 lbs. of meat\, bones\, trimmings and skin. \nWe will not cook in this class\, but charcuterie and wine will be provided. \nClasses are for adults. Youth ages 12 and up may attend with purchase of an additional ticket and close parent/guardian supervision during class. \nRegistration closes two business days before class. All attendees must purchase tickets to attend. No walk-ins allowed.
