Do not miss this highly educational class on covering Ant\, Bee and Wasp behavior. There are solitary\, semi-social\, and completely social creatures and humans can learn about the role of competition and cooperation from watching these creatures live. Then we will explore whether honeybees from Europe\, Asia and Africa compete with hummingbirds and native pollinators. \nLes Crowder has been a passionate advocate of learning about and living with nature’s creatures rather than fighting nature. He observed insects as a child and has always been especially interested in social insects that communicate with each other and make decisions as a group. Les has worked in agriculture as a farm worker in conventional industry and as an organic farmer and beekeeper. He got a degree in Biology and Spanish from the University of New Mexico. Chelsea Green published his book\, “Top-Bar Beekeeping” in 2012. He often repeats that “The only way we are going to rise is if we all rise together!”

DESCRIPTION:From the Sustainable Food Center –\nJoin Tye Lewis\, owner of Tye Cooks Austin\, and learn how to make perfect dumplings from scratch!\n\nDumplings can be filled with almost anything\, and this class will focus on traditional flavors with a local\, seasonal twist. Class participants will learn step-by-step how to make dumplings\, and leave feeling inspired to make them at home. Tye will demonstrate both meat-based and vegetarian fillings\, and you will make dumpling dough to take home with you. She will also show you three basic ways dumplings can be cooked: fried\, steamed and boiled – and how to complete the presentation with a dipping sauce and a side dish!\n\nTwo local wines (a red and a white) will be served with the dumplings. \nSegments of this class will be hands-on\, and everyone will get to eat what they make (but it might not be a complete meal). Please bring a medium-size zip-top bag or container to pack up your dough. \n\nClasses are for adults. DESCRIPTION:From the Natural Gardener –\nTuesday\, June 12th at 10am – “Growing Citrus in Central Texas” with Neil Schmidt.   \nGrapefruits\, Kumquats\, Mandarins\, Oranges\, Lemons and Limes OH MY!  Cultures around the world have used many types of citrus in a wide variety of ways from food to medicine to insect repellant.  The fruit is unlike anything else and the flowers have an amazingly strong-sweet scent.  Citrus grow quickly and do very well in our heat! Central Texas is also cold enough in the winter that almost all citrus will need to be protected.  But luckily there are many varieties that can be grown effectively in pots which can be more easily moved and protected.  There are even a few varieties that can be grown in the ground. \nNeil Schmidt is the Education Coordinator and Information Specialist for the Natural Gardener as well as one of the staff horticulturist at the information desk.  He has a passion for all things citrus and will share this knowledge so you can be successful too!
